Today there is something completely new a healthy carrot potato stew! So far there have been fewer soups and stews on this blog, because I personally am not such a big fan of them. But on holidays it can also be a healthy vegetable stew, right?
My grandma finally got me to the recipe. Because, as a child I loved this stew. Really nice with delicious sausage pieces, evening after a long day at the beach. Oh yes, memories are awakened. But we are here for the recipe and not a touching reminder. So let’s just start with the recipe for my carrot potato stew.
The recipe for a healthy vegetable stew
- 300 g Potatoes
- 250 g Carrots
- 175 ml Water
- 150 g Low-Carb Wieners
- 1 Cube Vegetable Bouillon
- 1 Pinch Salt and pepper
- Some Parsley
- Cut the potatoes and carrots into small pieces and put them in a saucepan together with the bouillon and water.
- Cook for 20 minutes.
- Take the boiled carrots and Potatoes and mash with an immersion blender.
- Cut the wieners into pieces and add them to the rest.
- Season with salt, parsley and pepper and serve.
